Ginger Shrimp Salad

 

Ingredients:

100g peeled and deveined shrimp
About ½ inch piece fresh ginger peeled and grated
1 clove minced garlic
1 cucumber chopped about one inch squares
1 tbsp apple cider vinegar
2 tbsp lime juice
pepper to taste

Directions:

Place cucumbers in a bowl and set aside. Saute shrimp on med-low or med heat with ginger, garlic, apple cider vinegar, and lime juice until pink. Take shrimp out of pan and place in bowl of other ingredients. Add 2 tbsp water to create deglazing sauce and simmer. Once reduced, add the extra sauce and refrigerate 30 min. Add pepper to taste.
